John Iha is a fisherman and a chef, and is always looking for more efficient ways to do things. Here, he caught an o’io (bonefish) and shows us how to scale it without making a mess, clean it, and scrape the meat. Bonus: You learn how to make fishcake with it!

Just one caveat, you need to add a scrambled raw egg to this recipe. This video is missing the egg, which is important in making fishcake.
