Recipe: Jenn Lieu’s Jungle Asian Salad
About a month ago, Vinh Ta reached out to me on Instagram to ask if I would try his products and blog about them. I was honest: I didn’t know how to cook anything with Vietnamese flair, but my friend Jennifer Lieu was excellent at it. He had us both pick up a set of his VTA Products sauces to try.

Truth be told, I was really really really hoping Jenn would make me some of her amazing pho, which is probably the best I’ve had. Instead, she made me a nice, healthy salad. Now, don’t get me wrong! This was still tasty. Someday, I hope I can talk Jenn into making more pho, though.
Salad
5 Kaffir Lime
1 cup romaine lettuce, shredded
1 cup green cabbage, shredded
1 cup purple cabbage, shredded
1/2 cup of avocado, cubed
1/4 cup of Japanese cucumber, sliced
1 tablespoon of lemon or lime
4 large prawns
Juice the kaffir lime, then toss all ingredients together. Lay the prawns neatly over the top. Drizzle dressing over the salad.
Spicy dressing
2 tablespoon of Siracha sauce
2 tablespoon of VTA Hoisin Sauce
1/2 tablespoon of crushed peanuts
Mix the two sauces together well, pour over salad. Sprinkle with crushed peanuts.
I just need to warn you that the dressing she made was super hot! You can probably leave out the sriracha if you don’t like things too spicy.
